Bread pudding is one of mine & Mrs. Cog Hill's favorite desserts, & this simple Bread Pudding Recipe will not disappoint.
Ingredients: 1 (16 oz) Loaf of Day Old French Bread 2 1/2 Cups of Milk 4 Eggs (Lightly Beaten)
1 Cup of Half & Half Pinch of Salt
1 Cup of Sugar
1 Tablespoon of Vanilla 1 1/2 Cups of Packed Brown Sugar
1/2 Cups of Softened Butter (Unsalted) 1 Cup of Chopped Pecans
Instructions: -Preheat your oven to 350 degrees F. -Cut the french bread into cubes & the place the cubes in a large mixing bowl. -In another mixing bowl, lightly beat the eggs, add in the milk, half & half, sugar, salt, & vanilla to eggs & mix all together. Pour this mixture over the cubed bread, & allow it to sit for 5 to 10 minutes -In another small mxing bowl, combine the softened butter, brown sugar, & pecans. (Mixture will have the consistency of wet sand.) -Pour half of the bread mixture into a 8x8 inch baking dish or pan, & top it with half the pecan mixture. -Then add the remaining bread mixture & top it with remaining pecan mixture.
-Place pan on a cookie sheet with a edge to catch any mixture that may boil over.
-Bake at 350 degrees F. for 45 to 55 minutes. Center will still jiggle slightly, but not to worry, bc it should set when it cools. (Recipe Author: Unknown)
We like serve it still warm, with a scoop or 2 of homemade vanilla ice cream.
